EDTA disodium has the following three functions:
- Its coordination is used to prevent discoloration, deterioration, turbidity, oxidation loss of vitamin C and other harmful reactions caused by metal ions.
- As a water treatment agent, it can prevent the adverse effects of calcium, magnesium, iron, manganese and other metal ions in water.
- The trace metals (iron, copper, etc.) in the oil can promote the oxidation of the oil. This product can be complexed with trace metal ions, which can improve the oxidation resistance of the oil and prevent food discoloration.
