Benzalacetone is prepared by vacuum distillation. It is colorless to light yellow shiny flake crystal, with fragrant pea aroma and spicy and irritating taste. It turns dark in light, is combustible, and is easy to decompose when heated for a long time. Naturally present in Hydrolyzed Soybean chemicalbook protein. The refractive index is 1.5836 (45.9 ℃). Slightly soluble in water and petroleum ether, slightly soluble in benzene, easily soluble in ethanol, benzene, ether, chloroform and sulfuric acid. It is orange red when interacting with sulfuric acid. This characteristic can be used to detect this product.

Application of Benzalacetone CAS 122-57-6
Benzyl acetone is used as a flavouring agent to modulate fragrant flavor such as peas, cocoa, nuts, cherries, fruits and so on. It is also used as a tincting agent and anti Chemicalbook volatilization agent for flower flavors. It is generally not used in cosmetics because of its irritating effect on skin.
