L-Cysteine hydrochloride/HCL anhydrous (CAS 52-89-1) exists in colorless to white crystalline or crystalline powder, slightly sour with special smell, melting point 175 ℃ (decomposition). It is soluble in water, and the aqueous solution is acidic. The pH value of 1% solution is about 1.7, and the pH value of 0.1% solution is about 2.4. It is also soluble in alcohol, ammonia and acetic acid, but insoluble in ether, acetone, benzene, etc. It has the function of reducing, antioxidation and preventing non enzymatic browning.
Application
